Pumpkin Muffins

Looking for a delicious fall snack, well you have come to the right place…

…Pumpkin muffins are an awesome autumn grab and go breakfast or school snack, just bake the night before and you are ready to go!

  Ingredients
1 cup sugar
¼ cup Wesson oil
2 eggs
¾ cup pumpkin
1 ½ cups flour
1 tsp. baking powder
½ tsp. baking soda
¼ tsp. cinnamon
½ tsp. salt
optional chocolate chips

Directions

  1. Preheat oven to 400 degrees.
  2. Mix sugar, oil, eggs and pumpkin
  3. Quickly stir in flour, baking powder, baking soda and spices into the mix.
  4. Fill muffin tins 2/3 of the way full.
  5. Bake for 18-20 minutes.

 

Now you are ready to enjoy a sweet fall treat on the way to school, during lunch or on the go.
