For the longest time, I have had omelets for breakfast in the morning, and somehow, when I’m done, I have always wanted more. Something slightly thicker but not as filling as quiche. I wanted something in the middle.

This weekend I made breakfast for my little sister and I decided to try something more filling than an omelet. To my great delight I discovered frittatas. This delicious dish is exactly what I was looking for; more filling and thicker than an omelet, but at the same time not as filling as quiche. You can have a frittata for breakfast, lunch, or dinner… and it is super easy and quick to make.  If you need to make food for little siblings like mine, it’s the perfect dish!fritatta

What you need:
1/2 tablespoon olive oil
2 to 3 green onions/ scallions, sliced (white and pale green parts only)
3 large eggs
1 tablespoon water
1 tablespoon chopped fresh cilantro leaves
Salt and freshly ground black pepper
1/4 cup Mexican crema or sour cream
1/4 cup shredded Oaxaca or mozzarella cheese
How to do it:
Heat your oven to 425 degrees. In a frying pan, chop up some scallions and put it in with the olive oil. While the flavor of the scallions is marinating with the olive oil, whisk and stir your eggs and cilantro leaves with the water in a bowl. Add your salt and pepper in as well. Put that mixture into the frying pan. Over the top of the mixture, put on your sour cream and cheese. It is alright if the egg is not cooked at this point, because we are going to pop the pan from the stove into the oven for 8-10 minutes. When the time is up, remove your frittata from the oven and dig in!
