A Salad You Will Actually Enjoy Eating
Ingredients:
- Kale (one bag)
- Two tbs spoons of olive oil
- Two tbs of apple cider vinegar
- One tbs of maple syrup
- Salt & pepper
- Apples
- Cranberries
- Walnuts
- Optional: poached eggs, roasted vegetables, kidney beans & bacon.
Directions:
To begin, grab a bag of kale and pulse in a processor (if you don’t have a processor, just use scissors!!). Pulse 3 to 5 times, then proceed to place all of the blended kale into a bowl. Place aside, and combine the oil, vinegar, syrup, and salt and pepper in a cup. Once blended, pour the dressing over and massage onto the leaves, until they look weepy. You can add any toppings you want to it! At the very least, I like to have apples, cranberries, and walnuts. My family’s favorite things to add on to it are bacon lardons, roasted sweet potato, and chopped up sweet potatoes.
