Spring Smoothie

It has been a long and hard winter, but at long last, spring is finally around the corner. There will be many new spring recipes posted on the medallion for this glorious season. Now that the weather is getting nicer, we think about grabbing our friends to go to the beach. It might not yet be warm enough for that, so the first warm day of the spring calls for tanning on a deck. Make a nice spring smoothie to sip while enjoying the glorious weather.  Next time there is a nice day and you find yourself laying outside in the warm sun, try bringing this refreshing and healthy spring smoothie with you. The ingredients conjure up a feel for summer sun and warm breezes. This drink is something like a Pina colada, but the mango flavor is more dominant.

What you need:

1 mango

1 cup coconut milk

1/2 cup orange juice

1/2 cup pineapple(frozen or fresh) *

extra fruits to put over it if desired (try raspberries)

Make it: Combine all the ingredients together and blend to the wanted consistency to drink. If you would like, sprinkle a few fruits of your choice on the drink. Enjoy!
